For many people, breakfast starts with cereal. Replace the sugar laden boxed cereals with a delicious and nutritious homemade granola. This granola is gluten-free, wheat-free, grain-free and refined sugar-free. Enjoy!
Ingredients
- 1 cup sesame seeds
- 1 cup desiccated coconut
- 1/2 cup shredded coconut
- 1 cup gluten free rolled oats
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup almond flour
- 1/2 cup hazelnuts chopped roughly
- 1/2 cup walnuts roughly
- 1/4 cup dried pomegranate seeds / cranberries
- 1/4 cup dried apricot pieces
- 1 Tblsp fine cinnamon
- Crack of pink salt
- 2 Tblspns xylitol or sweetener of choice to taste
- 1/2 cup honey
- 1/4 cup butter
Method
In a saucepan, mix together the honey, xylitol and the butter. Bring to a rolling boil while stirring. Remove from the heat and set aside.
Combine all the nuts, seeds and dried fruit in a bowl. Add the other dry ingredients and toss well. Scoop onto a baking tray lined with baking paper. Bake on 100 for 10 minutes then toss.
Repeat till the mixture is toasted as desired.
Remove from the oven and pour over the honey mixture. Toss to coat well. Leave to cool then break into chunky bits.
Store in an airtight container.
